Trehalose
Trehalose as white crystals, soluble in water and hot alcohol, insoluble in
ether. Fehling's solution can not make the reduction, nor can it be crude α-
glucosidase hydrolysis to give D- glucose 2mol when acid hydrolysis. Their
solution is stable, colorless, odorless, taste somewhat sweet.
