antioxidants. Indeed, cocoa beans have been found to be one of the greatest
sources of polyphenols in our diet. Some of these antioxidants remain in
cocoa butter even after it's separated from the bean solids, making it
beneficial for enhancing immunity, reducing inflammation, and improving
heart health - despite being a saturated fat, once feared.

Cocoa butter is a healthy fat, predominantly saturated like coconut oil.
The amount of saturated fats it contains (as opposed to unsaturated fats)
ranges from 57 percent to 64 percent of the total fat content, depending on
the specific type. Among the different types of fatty acids are the
following:

Stearic acid (approximately 24 percent to 37 percent of the total fat
content)
Palmitic acid (24 percent to 30 percent)
Myristic acid (0 to 4 percent)
Arachidic acid (approximately 1 percent)
Lauric acid (only about 0 percent to 1 percent)
